What is a really good kitchen knife?
Im putting together a little gift basket for my husband, he loves to cook but complains all the time about dull knives or knives that have to be sharpened all the time.
Can someone suggest a really good kitchen knife? Im wanting just 1 sharp, dependable, long lasting chef’s knife. I dont have a bunch of money so some of those Japanese ones that cost $300 are deff out.

I should add that he isnt a professional chef, Im not looking to drop $100 on knife, I just though it would be a nice gesture and it would be something he could enjoy.
Given your requirements, I’d say your best bet is Forschner Victorinox chef’s knife, forget the whole forged/full tang thing, it doesn’t matter anyway. You can get them for 30-40$ at knifecenter.com.
You won’t be able to tell the difference in terms of edge holding when comparing those Forschners to Wusthofs and Henckels, except for Henckel cermax line, which is way out of your budget anyway.
I assume the other poster was referring to Tramontina knives, which are also acceptable for your requirements.
As for the long lasting…
I’m no pro cook either, but I am into knives. I’ve tried pretty much all mainstream and quite a few expensive/rare steels and other exotic materials(ceramics, talonite, stellite 6K) for kitchen knives and there is no helping it, they all dull with the use.

Plastic knives dull the edges too, at less extent compared to marble/glass cutting boards, but damaging.
Second, He has to learn how to sharpen the knives, otherwise there is not a steel or other composite that will last even few months at acceptable levels of sharpness. So, doesn’t matter what knife you buy, 40$ forschner or 1200$ Masamoto Honyaki Gyuto, it will dull in a few months, and yes, 1200$ knife will not last 25 times longer w/o sharpening. May be 10 times at best. But it’ll give you thinner edge and a lot better cutting performance. That’s what you pay the price for.
Knowledgeable pro chef’s consider knife to be good if it can go through a shift (8-9 hours) without sharpening. That translates into few weeks of general home use. After that it needs sharpening, or sometimes even sooner. Depends on the use. Just most of the people are used to using dull knives and/or never used sharp knife. That includes a lot of pro cooks too.
